Meet Mike Mancino! From our monthly specials to our custom designed wedding packages and everything in between, Mike is the creative mind behind Boston Catering’s culinary offerings. He first learned to cook at the hand of his Italian grandfather and later at the Culinary Institute of America. Before bringing his cooking artistry to Boston Catering and Events as our Executive Chef, he honed his skills at private beach clubs, bistros, and a few seasons at Fenway Park.
What makes Mike’s talent so special is that he pours his heart and soul into every meal and menu for our customers. He cooks for our customers like he would for his own family. Nothing is more evident of this than our holiday menus. Here’s Mike’s personal story behind our Mama-cino Holiday Breakfast menu:
“Growing up, my family would always celebrate a big, extended family Christmas Eve at one of my aunt’s or uncle’s houses. Then after that, we would go back to my house with my parents and siblings to exchange gifts and celebrate the holiday. We never really did much Christmas morning, Christmas Eve was our big tradition. After not having much to look forward to on Christmas morning, my mother started to make breakfast for the whole family and we would all sit down and eat together. Over time, it started to evolve and develop into another family tradition. It became not just my immediate family but my aunts, uncles, cousins, and even my Memere and Grammy would join us from time-to-time. I now always remember Christmas mornings as waking up to the smell of bacon, French toast, and fresh baked cinnamon rolls. Boston Catering and Events’ Mama-cino’s Holiday Breakfast Menu is my way of sharing one of my family’s holiday traditions with you. I hope you enjoy it as much as we do!” - Mike

Start your own family holiday breakfast tradition with one of Mike’s recipes:
German Egg Casserole
Ingredients:
3/4 lb. cheddar cheese (12 oz) shredded
1 # ground sausage, cooked
1 c peppers and onions, chopped and cooked
4 eggs
3 cups milk
1 t. salt
1/2 t. pepper
In a 9x12 greased pan, spread sausage, peppers, and onions on bottom of the pan. Top with shredded cheese.
Gently whisk the rest of ingredients and slowly pour over the cheese.
Bake uncovered in preheated oven at 325°F for 45 minutes or until eggs are cooked throughout.
